Not many actually wants unique colours. The minority sure wants more colour options for the iPhone. Some really wants the red one, the green one, the gold one. Does Apple need to specially design and manufacture these unique variants of the iPhone just to suit the minority? No.

Most people would like to have the black and white variant. Black and white mostly suits almost everyone. The minority however can opt for aftermarket 3rd party options that changes the front display or glass or whatever you want for you. Of course, that would void your warranty.

That is with exception of the pink colour. The pink colour may be a viable option for manufacturers as it caters specially to the ladies who many simply loves pink. (I heard some of the Galaxy series had pink variants) The men on the other hand is stereotypically known to be simple and masculine and opt for the normal black and white colours.

However if you really do like colors (I don't understand, won't you want design and the hardware more?), you can instead opt for the Nokia Lumia series which has same nice colourful varieties.
