I put 1 3/4 cups of sugar and 1 3/4 cups of water in a sauce pan and brought it to a simmer. Then I?immediately?added 1 TB of Pumpkin Pie Spice and 2 TB of pumpkin puree. Stir well and just as it starts to simmer again remove from heat and let it sit until it's at room temp. Stir in a 1/2 tsp of Vanilla extract. This syrup is thinner than store bought.
Put a coffee filter in a funnel over your container and pour in your syrup. This will take a while so have some patience. You can change out the filter to speed things up if you like. It really doesn't need to be filtered but it is such a nice color after being filtered and mellows the?sharpness?of the spices a bit. Or add spices, filter, then stir in the pumpkin. Because of the addition of pumpkin, be sure you?refrigerate?this syrup.
Wasn't that easy? Serve it warm over?pancakes, use it instead of sugar or honey in hot?cereals, stir it into plain yogurt,?or perhaps over ice cream. It's so good! Maybe even in your coffee? Hmmm, I'll have to try that next. Wouldn't this make a super gift from your kitchen?
